Sugar Stages Mode 

What is it?

Sugar stages are the different levels of consistency that sugar reaches when it is heated. During this process, the sugar changes in terms of texture, colour, and taste, depending on the temperature, time and proportion of water and sugar. This allows you to create different types of sweets (e.g. fudge, toffee) or confections (e.g. caramel, honeycomb) using Guided Cooking.

How does it work?

Sugar cooked to different temperatures produces different textures and flavours – from fudge (112-116°C) to liquid caramel (170°C). Sugar Stages mode precisely cooks ingredients to these specific temperatures.

Works best for:

  • The sweet lover looking to make their own treats at home.
  • Patisserie chefs looking for easier ways to make caramel and confectionary.
  • Perfectionist looking to perfect different sugar techniques every time with the touch of a button.
