  • 1 garlic clove
  • 5 sprigs fresh thyme, leaves only
  • 4 sprigs fresh parsley, leaves only
  • 80 g unsalted butter, diced
  • 2 pinches fine sea salt
  • 2 pinches ground black pepper

French Bistro Potato Salad

  • 4 fresh chives, cut in pieces (2 cm)
  • 4 sprigs fresh thyme, leaves only
  • 3 sprigs fresh parsley, leaves only
  • 2 spring onions (approx. 35 g), cut in pieces
  • 60 g extra virgin olive oil
  • 30 g red wine vinegar
  • 1 tsp Dijon mustard
  • ½ tsp fine sea salt, plus extra to taste
  • 2 pinches ground black pepper, plus extra to taste
  • 500 g water, boiling
  • 700 g new potatoes, quartered
  • vegetable oil, for frying
  • 4 rump steaks
