  • 40 g spring onions, cut in pieces (2 cm)
  • 1000 g water
  • 600 g Jersey Royals, scrubbed and rinsed (whole or cut in 4 cm pieces if large)
    or new potatoes, scrubbed and rinsed, cut in pieces (4 cm)
  • 3 large eggs
  • 4 Tbsp mayonnaise
  • 2 tsp white wine vinegar
  • ½ tsp fine sea salt, or to taste
  • ¼ tsp ground black pepper, or to taste
  • 5 fresh chives, snipped in lengths (3 mm), for garnishing
