Ingredients

  • 80 g Cheddar cheese cut in pieces (2 cm)
  • 270 g plain flour plus extra for dusting
  • 1 lemon finely grated zest only
  • 10 fresh basil leaves
  • 155 g unsalted butter diced, cold, plus extra for greasing
  • 1 ¾ - 2 tsp fine sea salt to taste
  • 70 g water cold
  • 300 g onions halved vertically or cut in wedges that fit in feeder
  • 240 g plum tomatoes (approx. 3 small tomatoes)
  • 30 g olive oil
  • 1 tsp light brown sugar
  • 1 ¼ - 1 ½ tsp ground black pepper to taste
  • 300 g fresh baby spinach
  • 2 garlic cloves
  • ¾ tsp ground nutmeg
  • 200 g ricotta cheese
  • 200 g double cream
  • 2 medium eggs
