Ingredients

Burger Patties

  • 100 g stale bread, torn in pieces
  • 20 g fresh parsley leaves
  • 1 lemon, thin peelings of skin only
  • 400 g carrots, peeled, cut in pieces (2 cm)
  • 10 g olive oil
  • ½ tsp fine sea salt
  • 2 pinches ground black pepper
  • 240 g tinned chickpeas, rinsed, drained (1 x 400 g tin)
  • 60 g red onion, quartered
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 medium egg
  • 50 g toasted sesame seeds

Tahini Sauce

  • 40 g water
  • 80 g tahini
  • 15 g freshly squeezed lemon juice
  • 1 tsp honey
  • 1 pinch fine sea salt
  • 1 pinch ground black pepper

Finalisation

  • 2 Tbsp olive oil
  • 6 burger buns, halved and toasted
  • rocket leaves, for serving
  • 1 avocado, sliced, for serving
