  • ½ tsp dried fennel seeds
  • ½ tsp cumin seeds
  • 1 tsp coriander seeds
  • 2 tsp ground turmeric
  • 2 cm fresh root ginger, peeled
  • 4 garlic cloves
  • 1 - 2 fresh red chillies, deseeded
  • 4 sprigs fresh coriander
  • 1 Tbsp olive oil
  • 100 g carrots, cut in pieces
  • 2 celery stalks, cut in pieces
  • 100 g red peppers, deseeded and cut in pieces
  • 2 Tbsp soy sauce
    or 2 Tbsp tamari
  • 1 Tbsp tamarind paste
  • 1 Tbsp oyster sauce
  • 1 Tbsp dark brown sugar
  • 900 g water
  • 300 g French green lentils
  • 500 g sausages
  • 270 g coconut cream
  • 60 g peanut butter
  • 150 g broccoli florets
  • 150 g cauliflower florets
  • 100 g fresh green beans, trimmed and cut in thirds
