Ingredients

  • 100 g rice vermicelli
  • 600 g water, plus extra hot water for soaking
  • 1 Tbsp soy sauce
  • 300 g raw prawns, peeled
  • 6 garlic cloves
  • ½ - 1 fresh red chilli, halved, deseeded, to taste
  • 1 tsp sugar
  • 2 tsp fish sauce
  • 20 - 30 g fresh root ginger, peeled, cut in round slices (2 mm), to taste
  • 20 g rice wine
    or dry sherry
  • 20 g oyster sauce
  • 30 g sunflower oil
  • 3 spring onions (approx. 20 g), finely sliced
