Ingredients

Lemon curd

  • 85 g white sugar
  • 10 g lemon peel only, no white pith
  • 40 g freshly squeezed lemon juice
  • 2 eggs
  • 50 g unsalted butter cut into pieces

Puff pastry tartlets

  • 1 egg
  • 1 tbsp milk
  • 3 sheets puff pastry (see Tip)
  • 1 - 1 ½ tbsp white sugar to sprinkle

Assembly

  • 5 - 6 nectarines ripe, unpeeled, trimmed and cut in halve, stones removed
  • 250 g mascarpone cheese
  • 80 g pouring (whipping) cream
  • fresh mint leaves to decorate
  • 2 tbsp shelled unsalted pistachio nuts chopped, to decorate
