Ingredients

Labne

  • 500 g natural yoghurt

Dressing

  • 1 garlic clove
  • 2 tsp dried mixed herbs
  • 50 g honey
  • 30 g wholegrain mustard
  • 1 - 2 pinches sea salt, to taste
  • 1 pinch ground black pepper, to taste
  • 60 g apple cider vinegar
  • 120 g olive oil

Salad

  • 50 g shelled unsalted pistachio nuts
  • 1 tbsp sesame seeds
  • 2 tsp sunflower seeds
  • 1 tsp sea salt flakes, plus extra to taste
  • 500 g Roma tomatoes, cut into thick slices
  • 500 g heirloom tomatoes, cut into slices, or cherry tomatoes, cut into halves
  • 60 g pitted green Sicilian olives, cut into slices
  • ¼ red onion, cut into thin slices
  • 120 g rocket, or fresh baby spinach leaves
  • 30 g snow pea sprouts
  • 4 - 5 sprigs fresh basil, leaves only
  • 1 pinch ground black pepper, to taste
