  • 1 lemon, peel (no white pith) and juice only
  • 2 tsp smoked paprika
  • 1 garlic clove
  • 2 spring onions/green onions, trimmed and cut into thirds
  • 800 g canned cannellini beans, no-added salt, rinsed and drained
  • 1 tbsp freshly squeezed lemon juice
  • ground black pepper, to taste
  • 60 g baby kale leaves, finely sliced
  • 1 tsp extra virgin olive oil
  • 4 eggs, chilled
  • 1700 g water
  • 2 tbsp white vinegar
  • 1 avocado, flesh only
  • 100 g cherry tomatoes, cut into halves
  • 4 slices seeded wholemeal bread (58 g each), toasted (see Tips)
