Ingredients

Dough

  • 220 g water
  • 1 tsp sugar
  • 2 tsp dried instant yeast
    or 20 g fresh yeast, crumbled
  • 20 g oil, plus extra for brushing
  • 400 g bread flour
  • 1 tsp salt

Paneer topping

  • 250 g paneer cheese, cut in cubes (1-2 cm)
  • 200 g peppers, cut in pieces (1-2 cm)
  • 200 g onions, cut in pieces (1-2 cm)
  • 2 garlic cloves
  • 150 g yoghurt
  • 1 ½ tsp ground coriander
  • 1 - 1 ½ tsp chilli powder
  • 1 tsp ground turmeric
  • 1 ½ tsp garam masala
  • 2 tsp freshly squeezed lemon juice
  • ¾ - 1 tsp salt

Tomato sauce

  • 3 garlic cloves
  • 15 g fresh basil leaves
  • 2 tsp dried oregano
  • 370 g tomatoes, deseeded, cut in pieces
  • 20 g olive oil
  • 1 - 1 ½ tsp sugar
  • ¾ tsp salt
  • ½ tsp ground pepper

Assembly

  • 200 g mozzarella, in pieces
  • flour, for flouring
  • dried chilli flakes, for sprinkling (optional)
