  • 1 lemon, finely grated zest only
  • 35 g freshly squeezed lemon juice
  • 200 g sweet potatoes, cut in pieces
  • 200 g mixed peppers, any colour, cut in pieces
  • 100 g leeks, cut in pieces
  • 150 g celeriac, cut in pieces
  • 1 tsp salt
  • ½ - 1 fresh chilli, to taste (optional)
  • 45 g linseeds
  • 2 medium eggs

Dressing

  • 80 g olive oil
  • 1 garlic clove
  • ½ fresh chilli
  • 20 g fresh basil leaves
  • 20 g fresh coriander leaves
  • 20 g fresh chives, cut in pieces (5 cm)
  • ½ tsp salt, or to taste
  • 120 g yoghurt
  • 30 g lime juice
