  • 1 - 2 tsp fine sea salt, to taste

  • 2 garlic cloves
  • 250 g onions, quartered
  • 30 g plain flour
  • ½ beef stock cube (for 0.5 l), crumbled
    or ½ tsp beef stock paste, homemade
  • 250 g water
  • 250 g Guinness®
  • 250 g button mushrooms, quartered
  • 12 fresh oysters, shucked, with any juices
  • 1 sheet puff pastry, ready-rolled, at room temperature (see tip)
  • 1 medium egg, beaten
