Ingredients

  • 100 g brown onions cut into halves
  • 100 g bacon cubes
  • 500 - 600 g pork tenderloin
  • 2 tsp salt
  • ¼ tsp ground pepper
  • 1 - 1 ½ tsp ground sweet paprika
  • 6 - 8 slices lean bacon, smoked (60-80 g)
  • 500 g preserved sauerkraut
  • 1 dried bay leaf (optional)
  • 3 juniper berries (optional)
  • 500 g water
  • 750 g potatoes cut into pieces (3 cm)
  • 250 g onions cut into halves
  • 3 tbsp oil for frying
  • 140 g full cream milk
  • 40 g unsalted butter
  • 2 - 3 pinches ground nutmeg
