Ingredients

Chilli mayonnaise

  • 1 fresh long red chilli, deseeded if preferred and cut into halves
  • 80 g mayonnaise (see Tips)
  • 2 tsp lime juice

Mussel fritters

  • 30 g sweet potato, unpeeled and cut into julienne (approx. 5 cm long)
  • 20 g fresh ginger (5 cm piece), cut into julienne
  • 1 fresh long red chilli, trimmed, deseeded and cut into julienne
  • 500 g water
  • 1000 g mussels (New Zealand green lipped), cleaned and debearded
  • 2 spring onions/shallots, trimmed and cut into thirds
  • 2 garlic cloves
  • 2 sprigs fresh coriander, leaves only, plus an extra 24 fresh coriander leaves
  • 100 g full cream milk
  • 50 g plain flour
  • 1 tsp baking powder
  • 1 egg
  • ½ tsp salt
  • 2 pinches ground black pepper
  • 5 - 6 tbsp vegetable oil, plus extra for frying fritters
