Ingredients

Pizza Dough

  • 30 g olive oil, plus extra for greasing
  • 20 g fresh yeast, crumbled
  • 220 g water
  • 1 tsp sugar
  • 400 g bread flour
  • 1 tsp fine sea salt

Pizza Bianca with Courgette and Mozzarella

  • 2 sprigs fresh rosemary (approx. 10 cm long), leaves only
  • 200 g mozzarella cheese, cut into cubes (3 cm)
  • 1 garlic clove
  • 400 g courgettes, cut into pieces
  • 20 g olive oil
  • 1 pinch fine sea salt
  • 2 pinches ground black pepper

Caramelised Onion, Ham, Tomato and Mozzarella

  • 200 g mozzarella cheese, cut into cubes (3 cm)
  • 2 garlic cloves
  • 30 g olive oil
  • 400 g tinned chopped tomatoes
  • 1 tbsp tomato purée
  • 1 tbsp fresh oregano leaves
  • ¾ tsp fine sea salt
  • 250 g red onions (approx. 1½ onions), cut into halves
  • 20 g balsamic vinegar
  • 50 g raw sugar
  • 100 g cooked ham, cut into thin slices
  • 1 fresh tomato, finely diced

Smoked Salmon, Capers, Rocket and Lemon with Yoghurt Dressing

  • 150 g natural yoghurt
  • 1 tbsp lemon juice
  • 1 - 2 tsp whole milk
  • 1 pinch fine sea salt, to taste
  • 1 pinch ground black pepper, to taste
  • 20 g olive oil
  • 200 g smoked salmon, cut into thin slices
  • 2 tbsp pickled capers
  • 40 g rocket leaves, for garnishing
