Ingredients

  • 30 g unsalted butter plus extra for greasing
  • 130 g carrot cut into pieces (3-4 cm)
  • 100 g parsnip cut into pieces (3-4 cm)
  • 70 g cheddar cheese cut into pieces (3-4 cm)
  • 1 - 2 pinches sea salt to taste
  • 40 g wholemeal plain flour
  • 1 tbsp chia seeds
  • 2 tbsp poppy seeds
  • 510 g butternut pumpkin peeled and cut into pieces (3-4 cm)
  • 120 g red onion cut into halves
  • 1 fresh red chilli trimmed and deseeded, if preferred (optional)
  • 20 g extra virgin olive oil
  • 1 tbsp brown sugar
  • 60 g water
  • 20 g red wine vinegar
  • 120 g dry white wine
  • 1 dried bay leaf
  • 1 whole clove
  • 120 g feta cheese crumbled
  • 1 spring onion/shallot trimmed and cut into thin slices
  • 30 g Parmesan cheese cut into pieces (3 cm)
  • 2 eggs
  • 150 g pouring (whipping) cream
  • 1 tsp caraway seeds (optional)
