Ingredients

Chicken tikka

  • 1200 g skinless, boneless chicken thighs, cut into pieces (3 cm)
  • 2 tsp Kashmiri chilli powder
  • ½ tsp ground turmeric
  • 1 tsp sea salt
  • ¼ tsp ground cinnamon
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp garam masala (see Tips)
  • 1 ½ tbsp brown sugar
  • 5 garlic cloves
  • 3 cm piece fresh ginger
  • 100 g tomato paste
  • 100 g natural yoghurt

Masala

  • 40 g ghee (see Tips)
  • 1 - 2 brown onions (approx. 200 g), cut into quarters
  • 2 tsp piece fresh ginger, peeled
  • 1 garlic clove
  • 2 cardamom pods, crushed
  • 1 ½ tsp fenugreek seeds
  • 1 - 2 pinches sea salt
  • 1 - 2 pinches ground black pepper
  • 150 g pouring (whipping) cream
  • fresh coriander, leaves only, to garnish
