    or raw cane sugar, to taste
  • 1 orange, finely grated zest and 30 g juice
  • 125 g raspberries
    or strawberries, quartered
  • 1 peach (approx. 85 g), stone removed , diced (1 cm)
    or 1 apple, small (approx. 85 g), cored , diced (1 cm)
  • 4 egg whites, from medium eggs
  • 100 g icing sugar (see tip)
  • 1 pinch salt
