Ingredients

  • 2700 g water
  • 500 g yam (taro roots), peeled, cut in cubes (2 cm)
  • 3 tsp salt
  • 150 g tapioca flour
  • 8 garlic cloves
  • 20 g shallots
  • 15 g dried shrimp, soaked in hot water for 30 minutes
  • 30 g cooking oil, plus 2 tbsp
  • 10 g dried shredded squid, soak in hot water for 30 minutes
  • 4 dried shiitake mushrooms, soaked to soften, stems removed, cut in thin slices
  • 3 dried black fungus, soaked to soften, cut in thin strips
  • 100 g minced pork
  • 1 tbsp oyster sauce
  • 1 tsp dark sesame oil, roasted
  • ½ tsp dark soy sauce
  • ½ tsp white pepper powder
  • 1 fresh red chilli, julienned
  • 2 sprigs spring onions, chopped
