  • 10 g fine sea salt
  • 5 g black peppercorns
  • 240 g onions, quartered
  • 4 garlic cloves
  • 2 fresh lemon grass, white part only, cut in pieces
  • 4 fresh red chillies, halved, deseeded
  • 15 g fresh root ginger, peeled, cut in round slices (2 mm)
  • 15 g fresh galangal, peeled, cut in round slices (2 mm)
  • 50 g water
  • 800 g coconut cream
  • 1 Tbsp tamarind paste
  • ½ bunch fresh coriander, leaves only
