Ingredients

  • 50 g Parmesan cheese, cut in pieces (optional)
  • 40 g pistachio nuts, unsalted, shelled
  • 40 g pine nuts
  • 40 g flaked almonds
  • ½ tsp ground cinnamon
  • ½ tsp ground cumin
  • ½ tsp ground ginger
  • ½ tsp ground coriander
  • ½ tsp ground turmeric
  • 700 - 750 g cauliflower florets
  • 2 garlic cloves
  • 4 spring onions, trimmed and quartered
  • 8 sprigs fresh flat-leaf parsley, leaves only
  • 8 sprigs fresh coriander, leaves only
  • 200 g mushrooms, sliced
  • 30 g white wine
  • 500 g water
  • 300 g sweet potatoes, cut in pieces
  • 50 g currants
  • 80 g fresh baby spinach, roughly chopped
  • 12 dried apricots, cut into thin strips
  • ½ tsp fine sea salt, to taste
  • ½ tsp ground black pepper, to taste
