Ingredients

  • 795 g stewing beef trimmed and cubed (2.5 cm)
  • 2 tsp dried oregano
  • 1 tsp ground smoked paprika
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground cayenne pepper
  • 1 ¼ - 1 ¾ tsp sea salt to taste, divided
  • 1 - 2 pinches ground black pepper
  • 15 - 30 g fresh cilantro roots and stalks (leaves reserved to garnish) (see Tip)
  • 20 g olive oil
  • 200 g red onions cut into wedges (approx. 4 cm)
  • 1 jalapeño pepper fresh, halved, deseeded (optional)
  • 2 garlic cloves
  • 170 g red bell peppers deseeded and cut into pieces (2.5 cm)
    or 170 g yellow peppers deseeded and cut into pieces (2.5 cm)
  • 2 tsp cocoa powder
  • 1 tbsp red wine vinegar
  • 795 g canned crushed tomatoes
    or 795 g canned chopped tomatoes
  • 1 tsp instant coffee freeze-dried
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 395 g canned kidney beans rinsed and drained
  • 395 g canned black beans rinsed and drained, (optional)
  • sour cream to serve
  • grated cheddar cheese to serve (see Tips)
