  • 100 g carrots, cut in pieces
  • 150 g white cabbage, cut in pieces
  • 100 g olive oil
  • 300 g tomatoes, quartered
  • 80 g onions, halved
  • 4 garlic cloves
  • 1 serrano chilli, halved
    or 1 fresh jalapeño chilli, halved
  • 2 Tbsp cider vinegar
  • 100 g pitted black olives
  • 20 g pickled capers
  • 5 sprigs fresh parsley, leaves only
  • 3 sprigs fresh thyme, leaves only
  • 1 - 2 fish stock cubes (for 0.5 l each), to taste
  • ¼ tsp fine sea salt, or to taste
