  • 50 g Parmesan cheese cut into pieces
  • ¼ onion
  • 3 whole cloves
  • 450 g milk
  • 1 pinch paprika
  • 2 pinches sea salt
  • 2 pinches ground black pepper
  • 100 g soft goat's cheese (see Tips)
  • 5 eggs separated
  • 1 pinch cream of tartar
  • boiling water to cook
  • 50 g soft goat's cheese to top
  • shaved Parmesan cheese to top
  • sea salt to season
  • ground black pepper to season
