  • 1 tsp sesame oil
  • 3 - 4 Tbsp white miso paste, to taste
  • 2 tsp rice wine vinegar
  • 2 tsp caster sugar
  • 2 tsp salt
  • 1400 g water (approx. or enough to fully submerge bags but not higher than the maximum capacity of the bowl)
  • 30 g lemon juice, freshly squeezed (see tip)
    or 1 tsp ascorbic acid powder
  • 4 - 5 spring onions, thinly sliced (2 mm), for garnishing
  • toasted sesame seeds, for garnishing
