Ingredients

  • 120 g pickled cucumbers
  • 80 g cheddar cheese, cut into cubes
  • 80 g Gruyère cheese, cut into cubes
  • 850 g cauliflower, cut into florets (2-3 cm)
  • 2 garlic cloves
  • 135 g water
  • ¼ tsp sea salt, plus extra to taste
  • 1 - 2 pinches ground black pepper, plus extra to taste
  • 3 dried bay leaves
  • 6 whole black peppercorns
  • 200 g pouring (whipping) cream
  • 700 - 800 g firm white fish fillets, mixture of smoked and unsmoked
  • 1 tsp Dijon mustard
  • 2 - 3 tsp arrowroot starch
  • 1 tbsp pickled capers, drained and rinsed
  • 3 hard-boiled eggs, peeled and cut into quarters
