Ingredients

Focaccia

  • 600 g strong white bread flour
  • 3 tsp dried instant yeast (12 g)
  • 380 g water, warm
  • 20 g olive oil
  • 1 pinch caster sugar
  • 1 tsp fine sea salt
  • coarse salt, for sprinkling

Assembly

  • 1 garlic clove
  • 1 stick celery, cut in 3 pieces (approx. 80 g)
  • 30 g shallots, halved
  • 50 g pitted black olives
  • 100 g green olives, pitted and stuffed with pimento
  • 2 roasted red peppers, preserved, drained, cut in strips (approx. 150 g)
  • 80 g extra virgin olive oil
  • 1 Tbsp pickled capers, drained
  • 1 Tbsp red wine vinegar
  • 150 g salami, sliced
  • 130 g mortadella, sliced
  • 10 slices Emmental cheese
  • 250 g fresh mozzarella, drained well, sliced thinly
