Ingredients

  • 700 - 800 g stewing beef (gravy beef or chuck steak), cut into cubes (4-5 cm)
  • 40 g plain flour
  • 2 garlic cloves
  • 2 celery stalks, cut into pieces (3 cm)
  • 1 tbsp oil, plus extra for brushing
  • 1 brown onion, cut into eighths
  • 100 g bacon, cut into pieces (2 cm)
  • 2 carrots (approx. 250 g), cut into rounds (1 cm)
  • 100 g red wine
  • 1 tbsp Meat stock paste (see Tips)
  • 2 dried bay leaves
  • 1 tbsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp ground white pepper
  • 4 sprigs fresh thyme, leaves only
  • 200 g fresh button mushrooms, cut into halves
  • 350 g potatoes, peeled and cut into thin slices (5 mm)
