Ingredients

Meatballs

  • 6 sprigs fresh flat-leaf parsley, leaves only
  • ½ lemon, zest only, no white pith
  • ½ tsp dried chilli flakes (optional)
  • 2 tsp dried oregano
  • 80 g Parmesan cheese, cut into pieces (3 cm)
  • 60 g bread of choice, cut into pieces
  • 4 slices prosciutto, cut into pieces
  • ½ brown onion, cut into halves
  • 1 garlic clove
  • 500 g pork mince
  • 1 egg
  • 1 tsp salt
  • ½ tsp ground black pepper
  • olive oil, for greasing

Tomato sauce

  • 100 g tasty cheese, cut into pieces (3 cm)
  • 1 garlic clove
  • 50 - 80 g brown onion, cut into halves
  • 30 g olive oil, plus extra for greasing
  • 800 g canned crushed tomatoes
  • 1 tsp salt
  • 2 pinches ground black pepper

Herbed couscous

  • 400 g couscous
  • 400 g boiling water
  • ½ lemon, juice only
  • 1 tbsp salted butter
