  • 400 g fresh mixed mushrooms, sliced (e.g. king oyster, enoki, shitake, Swiss brown)
  • 180 g dried udon noodles
  • 20 g extra virgin olive oil, plus extra to stir through
  • ½ tsp sesame oil
  • 80 g unsalted butter, cut into pieces
  • 3 spring onions/green onions, thinly sliced, plus extra to garnish
  • 80 g pouring (whipping) cream
  • 2 pinches ground white pepper
  • 40 g white miso paste
  • shichimi togarashi seasoning, to serve (see Tip)
