Ingredients

  • 400 g chicken winglets or chicken drumettes (see Tips)
  • 1 - 2 pinches sea salt
  • 1 - 2 pinches ground white pepper
  • 4 garlic cloves
  • 3 cm piece fresh ginger peeled and sliced
  • 1 - 2 dried long red chillies deseeded if preferred
  • 20 g sesame oil
  • 40 g Shaoxing wine (Chinese cooking wine)
  • 30 g dark soy sauce
  • 60 g light soy sauce
  • 25 g rock sugar broken into pieces (1-2 cm - see Tips) or white sugar
  • 2 sprigs fresh basil leaves only, plus extra to garnish
  • cooked rice to serve
