Ingredients

  • 10 sprigs fresh coriander leaves and stems, plus extra leaves to garnish
  • 200 g fresh baby spinach
  • 2 brown onions cut into halves
  • 10 g fresh ginger
  • 5 garlic cloves
  • 1 fresh long red chilli (optional)
  • 1 tbsp coconut oil
  • 2 tsp ground cumin
  • 2 tsp garam masala
  • 2 tsp ground coriander
  • ½ tsp chilli powder mild, to taste
  • 400 g canned chopped tomatoes
  • 600 g lamb shoulder cut into pieces (3-4 cm)
  • 1 tbsp Vegetable stock paste (see Tips)
  • ground black pepper to taste
  • sea salt to taste
  • 1 lime juice only
  • dried chilli flakes to serve
  • 4 tbsp natural yoghurt to serve
