  • ½ tsp Dijon mustard
  • 3 Tbsp aquafaba (tinned chickpea liquid)
  • 1 Tbsp apple cider vinegar
  • 1 pinch salt plus ½ tsp, or to taste
  • 60 g red onions quartered
  • 10 g olive oil
  • 1 fresh red chilli halved, deseeded if desired, cut in pieces
  • 400 g tinned chopped tomatoes
  • 100 g water
  • 1 pinch ground cayenne pepper
  • 1 pinch smoked paprika
  • 800 - 850 g floury potatoes peeled, cut in pieces (2-3 cm)
