Ingredients

Hoisin Sauce

  • 2 garlic cloves
  • 150 g soy sauce
  • 150 g smooth peanut butter
  • 80 g dark brown sugar
  • 40 g brown rice vinegar
  • 50 g sesame oil
  • 2 tsp Chinese five spice powder
  • ¼ tsp ground cayenne pepper
  • 2 pinches ground black pepper

Bao Buns

  • 250 g strong white bread flour, plus extra for dusting
  • 2 tsp dried instant yeast
  • ¼ tsp baking powder
  • ¼ tsp bicarbonate of soda
  • 1 pinch caster sugar
  • ½ tsp fine sea salt
  • 1 Tbsp milk
  • 125 g water
  • groundnut oil, for greasing

Assembly

  • 1 garlic clove
  • 2 spring onions (approx. 30 g), cut in 3 pieces
  • 20 g soy sauce
  • 30 g sesame oil
  • 300 - 400 g leftover roast lamb, chicken, pork or beef, cut in pieces
  • 3 spring onions, sliced in thin batons (3 cm)
  • ½ cucumber, sliced in thin batons (3 cm)
  • coriander leaves, for garnishing
  • 1 fresh red chilli, sliced (5 mm)
  • sesame seeds, for garnishing
