Ingredients

Pie Crust

  • 120 g unsalted butter, chilled, diced
  • 60 g vegetable shortening, chilled, diced
  • 280 g plain flour
  • 2 tsp caster sugar
  • 1 tsp fine sea salt
  • 6 - 8 Tbsp water, cold
  • unsalted butter, for greasing

Banana Filling

  • 760 g bananas, sliced
  • 30 g orange juice (approx. 1 orange)
  • 60 g unsalted butter, diced
  • 680 g single cream
  • 140 g caster sugar
  • 6 egg yolks, from large eggs
  • 4 Tbsp cornflour
  • 60 g unsalted butter
  • 1 tsp natural vanilla extract
  • ¼ tsp fine sea salt

Pie Topping

  • 2 tsp sugar
  • 450 g whipping cream
  • ¼ tsp natural vanilla extract
  • 130 g bananas, sliced (1 cm) (approx. 1 banana)
  • 15 g orange juice (approx. ½ orange)
