- 300 g brown onion cut into quarters
- 20 g garlic cloves
- 60 g olive oil plus extra for drizzling

- 200 g carrots cut into slices (5 mm)
- 200 g zucchini cut into slices (7-10 mm)
- 150 g red capsicum cut into pieces (2-3 cm)
- 100 g frozen green peas
- 200 g feta cheese cut into small cubes (5 mm)
- 2 tsp fresh flat-leaf parsley chopped, for garnishing (optional)
