Ingredients

  • 200 g red onion cut into halves
    or 200 g brown onion cut into halves
  • 20 g garlic cloves
  • 1 fresh red chilli deseeded, if preferred, adjust to taste
  • 10 g olive oil
  • 750 g tomatoes cut into pieces
    or 750 g canned whole tomatoes
  • 200 g mixed capsicum (e.g. red and green), cut into thin strips (approx. 2 cm long)
  • 1 - 1 ½ tsp salt
  • 150 g canned sweet corn kernels rinsed and drained
  • 500 g canned kidney beans rinsed and drained (approx. 800 g before draining)
  • 6 vegetarian soy and mushroom sausages (450-600 g)
    or 6 vegetarian sausages of your choice
  • 3 - 4 sprigs fresh coriander leaves only
    or 3 - 4 sprigs fresh flat-leaf parsley leaves only
