  • 300 g skinless chicken thigh fillets trimmed and cut into halves
  • 2 tsp dried oregano
  • ground black pepper to taste
  • 20 g tomato paste
  • 1 tbsp Vegetable stock paste salt free (see Tips)
  • 170 g broccolini trimmed
  • 400 g canned cannellini beans no-added salt, rinsed and drained
  • 50 g roasted red capsicum cut into strips
  • 2 sprigs fresh parsley leaves only, to garnish
