  • 1 onion (approx. 150 g), cut into quarters
  • 2 garlic cloves
  • 1 fresh long red chilli, deseeded if preferred
  • 2 anchovy fillets
  • 20 g olive oil
  • 400 g canned chopped tomatoes
  • 100 g dry white wine
  • 250 g water
  • 1 tbsp Vegetable stock paste (see Tips)
  • 100 g dried risoni pasta
  • 4 sprigs fresh flat-leaf parsley, leaves only, roughly chopped to serve
