Ingredients

Dan dan sauce

  • 50 g dried shrimp (see Tips)
  • water, for soaking
  • 70 g garlic cloves
  • 70 g eschalots
  • 50 g brown onion
  • 1 tbsp chilli powder
  • 50 g miso paste (see Tips)
  • 150 g vegetable oil

Peanut sauce

  • 90 g peanut butter
  • 30 g sesame oil
  • 30 g hot chilli sauce

Minced pork sauce

  • 30 g zha cai (optional - see Tips)
  • 20 g fresh ginger, peeled
  • 20 g vegetable oil
  • 150 g pork mince
  • 20 g oyster sauce
  • ½ tsp Chicken stock paste (see Tips)
  • ½ tsp white sugar
  • 120 g water
  • 2 tsp cornflour
  • 1 ½ tsp dark soy sauce

Noodles

  • 1600 g water
  • 1 tsp salt
  • 1 tbsp Chicken stock paste (see Tips)
  • ¼ tsp white sugar
  • 1 tsp dark soy sauce
  • 300 g dried ramen noodles
  • 60 g white sesame seeds, toasted
  • 1 spring onion/shallot, cut into thin slices
  • unsalted peanuts, crushed
  • rice wine vinegar, to taste
