Ingredients

  • 800 g skinless, boneless chicken thighs, cut into pieces (3-4 cm)
  • 5 g ground cumin
  • 10 g ground coriander
  • 5 g garam masala (see Tips)
  • ¼ tsp ground turmeric
  • 1 tsp Kashmiri chilli powder (see Tips)
  • ¼ tsp salt
  • ground black pepper, to season
  • 2 garlic cloves
  • 10 g fresh ginger, peeled and cut into slices
  • 1 fresh long red chilli, deseeded if preferred and cut into halves
  • 1 fresh long green chilli, deseeded if preferred and cut into halves
  • 20 g oil
  • 200 g brown onion, cut into wedges (approx. 4 cm)
  • 1 red capsicum, deseeded and cut into pieces (2-3 cm)
  • 1 green capsicum, deseeded and cut into pieces (2-3 cm)
  • 30 g tomato paste
  • 400 g canned diced tomatoes
  • 1 tsp Chicken stock paste (see Tips)
  • fresh coriander, leaves only, for garnishing
  • dried chilli flakes, to serve (optional)
  • cooked rice or naan (see Tips)
