- 800 g skinless, boneless chicken thighs cut into pieces (3-4 cm)

- 1 red capsicum deseeded and cut into pieces (2-3 cm)
- 1 green capsicum deseeded and cut into pieces (2-3 cm)
- 400 g canned diced tomatoes
- 1 tsp Chicken stock paste (see Tips)
- 30 g tomato paste
- dried chilli flakes to serve (optional)
- fresh coriander leaves only, for garnishing
