Rainbow cauliflower sushi

  • 530 g cauliflower, cut into pieces (3 cm)
  • 50 g raw cashews
  • 1 avocado, flesh only
  • 1 tsp sesame oil
  • 1 ½ tsp wasabi paste
  • 6 nori sheets
  • ½ red capsicum, cut into fine julienne
  • 50 g red cabbage, shredded
  • 1 - 2 spring onions/shallots, cut into fine julienne
  • filtered water, for brushing

Peanut dipping sauce

  • 100 g roasted unsalted peanuts
  • 1 - 2 tbsp filtered water
  • 1 - 2 tbsp pure maple syrup
  • 1 - 2 tbsp tamari, gluten free (see Tip)
  • 3 - 4 tsp Sriracha® sauce
