  • 1 lemon, finely grated zest only
  • 3 jelly cubes, (quarter of one 135 g pack)
  • 1 vanilla pod, seeds only
  • 3 egg yolks, from medium eggs
  • 250 g milk
  • 4 gelatine leaves
  • 15 g candied cherries, diced (3 mm), soaked in Kirsch for 1 hour
  • 15 g candied angelica, diced (3 mm), soaked in Kirsch for 1 hour
  • 20 g Kirsch
  • 200 g whipping cream, chilled
