Ingredients

  • 395 g canned black beans unsalted, divided
  • 2 garlic cloves
  • 340 g broccoli florets
  • 10 sprigs cilantro, fresh stems only and cut into thirds, leaves reserved
  • 2 egg, large (65-70 g)
  • 70 g lupin flour (see Tip)
  • 2 tsp baking powder
  • 1 pinch black pepper, ground to taste, plus extra to season, to serve
  • extra virgin olive oil, in spray
  • 425 g mango, ripe sliced thinly
  • 30 g baby spinach, fresh
  • 1 jalapeño pepper sliced thinly
