  • 450 g russet potatoes peeled, diced (1 cm/½ in.)

  • ½ tsp salt to taste
  • ⅛ tsp black pepper, ground plus extra to sprinkle
  • 1 bay leaf, dried

  • soup crackers e.g. oyster crackers, to serve
