Ingredients

Beef fillet

  • 3 tbsp olive oil
  • 1 beef fillet (approx.1000 g - see Tips), trimmed
  • 2 tbsp Dijon mustard

Crêpes

  • 125 g milk
  • 70 g plain flour
  • 1 egg
  • 2 pinches sea salt
  • unsalted butter, to grease

Mushroom duxelles

  • 2 garlic cloves
  • 1 eschalot
  • 5 sprigs fresh thyme, leaves only
  • 400 g fresh Swiss brown mushrooms
  • 200 g button mushrooms
  • 1 tsp sea salt
  • ¼ tsp ground black pepper

Assembly

  • 8 slices prosciutto
  • plain flour, to dust
  • 300 g puff pastry (2-3 sheets - see Tips)
  • sea salt, to season
  • ground black pepper, to season
  • 2 egg yolks, lightly beaten
