  • 200 g water
  • 200 g Rapadura sugar
  • 2 cinnamon quills
  • 3 whole cloves
  • 1 orange zest and juice
  • ¼ tsp ground ginger
  • ¼ tsp ground cardamom
  • 900 - 1000 g pears (approx. 4-6 pears) peeled, cored and cut into quarters

Banana ice cream

  • 80 g macadamia nuts
  • 450 g banana cut into pieces (3 cm) and frozen
  • ½ tsp vanilla bean paste
