Ingredients

  • 1 red onion cut into quarters
  • 1 Lebanese cucumber trimmed
  • 2 garlic cloves
  • 3 tsp dried oregano
  • 360 g roasted whole red pepper strips or grilled, drained from the marinade, cut into pieces
  • 60 g extra virgin olive oil
  • 60 g white wine vinegar
  • ½ tsp sea salt
  • 1 pinch ground black pepper
  • 1 tsp honey
  • 1 baby cos lettuce with the hard core removed, cut in half
  • 950 g water
  • 120 g pitted Kalamata olives
  • 400 g canned chickpeas drained and rinsed
  • 120 g cherry tomatoes cut into halves
  • ½ - 1 fresh green chilli sliced and seeds removed if preferred
  • 1 package feta cheese (200 g), crumbled
  • fresh basil leaves only to serve
