Ingredients
- 700 g lamb shanks fat trimmed, cut in cubes (3 cm)
- 2300 g water
- 10 garlic cloves
- 30 g fresh ginger
- 2 fresh green chillies deseeded
- 150 g red onion cut in halves
- 100 g shallots
- 50 g ghee
- 2 tsp cumin seeds
- 10 cloves
- 2 dried bay leaves
- 1 tsp ground black pepper
- 5 cardamom pods
- 2 fresh lemongrass white part only
- 3 star anise
- 25 g kurma mix powder store-bought or homemade (see tips)
- 200 g tomatoes cut in wedges
- 150 - 200 g potatoes cut in cubes (2 cm)
- 1 tsp ground turmeric
- 2 tsp salt adjust to taste
- 2 tsp chicken stock powder
- 2 - 5 bird's eye chillies (chilli padi) cut in halves (optional)
- 30 g fried shallots to garnish (optional)
- 5 stalks fresh coriander leaves only, chopped, to garnish (optional)
- 5 stalks Chinese celery leaves only
- 2 sprigs spring onions thinly sliced, to garnish (optional)
